Simple Gingerbread Cookies

Are you in the festive spirit? I’ve been enjoying making holiday treats and wanted to share one with you. Gingerbread cookies are quite traditional for this season. Yes as they are simple to make and no you don't have to make 2 dozen cookies if you have a small household. This is great for small batch and a quick baking session.


Makes: 8 -10

Bake Time: 9 - 10 minutes

Ingredients

1 cup + 1 tbsp All- Purpose Flour

¼ cup Butter, softened

2 ½ tbsp Molasses 

¼ cup Brown Sugar

1 tsp Baking Soda

1 ½  tsp Vanilla Extract

1 tbsp Ground Ginger 

1 tsp Allspice

1 tsp Nutmeg

1 ½ tsp Cinnamon 

½  tsp Salt

Directions

  1. Preheat the oven to 350°F.

  2. In a medium mixing bowl combine sugar, butter, baking soda, molasses and spices.

  3. Slowly add flour in stages, mixing until dough is formed.

  4. Knead dough on a floured surface and add more flour if needed.

  5. Roll out dough (between parchment paper) to ¼ ich thickness and cut out desired shapes using cookie cutters of a knife.

  6. Bake on a parchment lined baking pan for 9 - 10 minutes.

  7. Decorate with royal icing or cream cheese icing.

Note: Adding an egg yolk to your mix can make it richer and give it more structure. You can refrigerate the dough once it's formed for up to 3 days before rolling out.
