Ingredients
2 Wild Sockeye Salmon Fillets
1 ¼ cup Roasted Pistachios, finely chopped
1 ½ tbsp Fresh Thyme, finely chopped
2 tsps Ginger, grated
2 tsp Garlic Powder
3 ½ tsps Extra Virgin Olive Oil
2 ½ tsps Black Pepper
1 tsp Salt
Directions
Preheat the oven to 350°F.
Using a small mixing bowl combine olive oil, garlic powder and salt, then pour over each salmon.
In a separate plate, add pistachios, fresh thyme, ginger, black pepper; mix with a fork to combine.
Place salmon, skin side up over pistachios mix and gently press down to ensure each salmon is coated.
Transfer salmon, skin side down to a baking pan covered with foil.
Bake for 15 - 20 minutes or until the salmon flakes easily. Cool for 4-5 minutes before serving.
