Spicy Shrimp and Corn over Rice
This Spicy Shrimp and Corn recipe is a re-vamped version I posted last year which used Cajun seasoning. If that is not an option for you and you want a spicy kick you can use red pepper flakes and Thai chili.
As a fan of seafood this is an easy way to incorporate shrimp into a meal!

Ingredients
2 ½ cups Rice, white or brown
8 -10 oz uncooked Shrimp, peeled and deveined
½ cup Corn Niblets
2 ½ tbsp Red Pepper Flakes
2 tbsp Garlic Powder
¼ cup Scallions sliced
1 small Onion, diced
2 Garlic Cloves, diced
2 ½ tbsp Olive Oil
2 Thai Chilli Peppers, sliced
Salt to taste
Directions
Prepare rice according to package instructions.
Place shrimp in a mixing bowl and add pepper flakes, garlic powder and salt, mix thoroughly and set aside.
In a heated sauté pan add olive oil, onion and garlic. Cook until fragrant then add seasoned shrimp and corn niblets and stir.
Allow shrimp to cook on both sides until they are pink and cooked through; 2-3 minutes.
Serve over rice and garnish with sliced scallions, chili peppers and fresh herbs.
