Roasted Carrots with Sliced Almonds

Who doesn’t enjoy carrots? You only need a few simple ingredients and minimal effort to transform these vibrant root vegetables into a tender and flavorful treat. What is great about the roasting process is that it brings out the natural sweetness of the carrots, creating a savory and slightly crispy exterior. As well as being visually appealing, roasted carrots provide a nutritious boost as a side dish to any meal.


Ingredients

5-6 large carrots, washed and peeled

3 ½ tbsp extra virgin olive oil

2 tbsp fresh parsley, chopped

¼ cup sour cream

1 ½ tsp lemon juice

2 ½ tsp Italian seasoning

¼ cup sliced almonds

Salt to taste

½ cup pea sprouts, optional

Directions

  1. Preheat oven to 400°F.

  2. Slice each carrot lengthwise and place in a single layer on a baking sheet lined with parchment paper.

  3. Drizzle carrots with olive oil, sprinkle with salt, Italian seasoning and top with sliced almonds.

  4. Transfer the carrots to the oven to roast for 20 - 35 minutes until they are tender, flipping each halfway through.

  5. In a small mixing bowl combine sour cream, lemon juice,and fresh parsley.

  6. Allow the carrots to cool for 2-3 minutes then top with sour cream and fresh pea sprouts.
