Best Ever Corn Fritters

Whether fried or baked, what I truly enjoy about corn fritters is the sweetness of the corn kernels and the crispy exterior. These are packed with flavor and can also be enjoyed with a zesty yogurt based dipping sauce. This simple recipe is a perfect addition to your fall menu.

Makes: 6 - 7

Cook Time: 10 minutes 

Ingredients

1 can of whole kernels corn or 2 ears of fresh corn

1 cup flour

½  stick unsalted Butter

1 egg, beaten

⅔  cup, milk

3-4 tbsp olive oil, for shallow frying

½ tsp salt

2 tsp garlic powder 

2 tsp ginger, grated

1 tsp baking powder 

Yogurt Dipping Sauce

1 cup Geek yogurt

2 tbsp lemon or lime 

1 tsp salt

1 tsp black pepper

Directions 

  1. In a medium size bowl combine corn fritter batter ingredients.

  2. Heat 3-4 tbsp olive oil in a large skillet. Using an ice cream scoop, place batter into the heated oil. Fry each fritter on both sides until golden brown; about 2-3 minutes.

  3. Remove each fritter from the heat and transfer to a paper towel to cool and drain excess oil.

  4. Combine ingredients for the yogurt dipping sauce.

  5. Serve fritters warm.
