Spicy & Savory Dutch Baby Pancake

I wanted to try a recipe that has been of interest for a little while. I know this is typically made as a sweeter dish as it is a pancake, however I’m more of a savory person, although I do appreciate some sweet treats from time to time. If you are anything like me then this Spicy and Savory recipe will intrigue you.


Serves: 4-5

Prep time: 6 mins

Cook time: 20-30 mins

Ingredients

4 Eggs, room temperature

1 cup All-Purpose flour

1 cup Whole Milk, room temperature

5 tbsp. Unsalted Butter, slightly softened

½  cup Mozzarella Cheese, Shredded

½ cup Cheddar Cheese, Shredded

1 ½ tbsp. Red Pepper Flakes

2 tsp Fresh Chives, chopped

2 tsp Fresh Thyme, chopped

1 tsp Fresh Savory 

1 ½  tsp Salt

Directions

Preheat the oven to 400°. In a large skillet, place 2 tbsp. of butter and transfer it in the oven for 2-5 minutes to allow the butter to brown.

Blend the flour, eggs, milk, salt and 2 tbsp. butter together until smooth; about 30 seconds.

Mix the herbs, pepper flakes and cheese together in a small bowl. 

Using oven mitts, carefully remove the skillet from the oven. Swirl the skillet around to coat the bottom and sides with butter.

Pour the blended mixture into the skillet and top with the herbs and cheese mix, spreading evenly over the pan.

Bake for 20 - 30 minutes or until puffy and the edges are golden brown. 

Once baked spread remaining butter over the pancake and finish with your favorite toppings.

Serve warm and enjoy!

Of course you can add extra fresh herbs to your pancake before serving.
