Deep Dish Sweet Potato Pie
That time of the year has come around once again. This year we are having some fun with this Deep Dish Sweet Potato Pie recipe. Hope you have plenty to be thankful for!

Serves:- 4-6
Ingredients
3-4 medium Sweet Potatoes, peeled,
½ cup Evaporated Milk
2 medium Eggs, beaten
¼ cup Butter, melted
⅓ cup Sugar
1 tsp Cinnamon
1 tsp Nutmeg
1 tsp Vanilla Extract
Pinch of Salt
9 inch uncooked Pie Crust
Directions
Preheat the oven to 375 degrees F.
In a medium pot, place peeled and roughly cut sweet potatoes and bring to a boil. Reduce heat to medium and cook until tender.
Mash the cooked sweet potatoes until somewhat smooth.
Gently mix, melted butter, eggs, evaporated milk, sugar, cinnamon, nutmeg, vanilla extract and salt, in a medium sized bowl.
Slowly whisk in the mashed sweet potatoes and combine thoroughly.
Place the pastry pie crust into a 9-inch pan with high edges.
Pour the sweet potato mixture into the pie crust ensuring it is evenly covered.
Transfer the pie to the oven and bake for 50 min -1 hour or until a knife inserted comes out clean.
Allow to cool and serve warm.
